Green Bean coffee is roasted in Clandeboye, Manitoba and delivered to Winnipeg.
Roasting is all about finding the "sweet spot" in the beans. Every bean is slightly different, so it's up to us to pay attention, hone our senses to determine what the batch needs.
Visual, aromatic and textural cues are all used to start the process. We do many sample roasts before settling on a roasting treatment for a batch. We'll try a sample roast in several brewing methods before making our decision.
It's a bit of science and a bit of art.
